Cutting Gnocchi

I realized that I’ve been seriously neglecting my absolute favorite thing on this blog.

Food!

I love making it and eating it. So today’s post is all about my current favorite recipe that just happens to be vegetarian. (See previous post about how I’m trying to be more sustainable when it comes to food.)

What is it?

Ricotta Gnocchi

What do I like about it? It’s fairly easy and pretty quick, but it tastes amazing! The simple sauce reminds me of authentic Italian food. Simple ingredients with amazing flavor. Here’s a quick photo summary of how it goes. Click the link above for the full recipe.

First you mix the ricotta, eggs, Parmesan cheese, salt, pepper, and garlic powder all together in a large bowl. Then, gently mix in 1 cup of flour to make a soft dough. More flour can be used if needed.

This is still a bit sticky and will need more flour.

Divide the dough into small pieces and roll each piece out into a rope. It should not be sticky, so use flour as needed. It can be a bit frustrating, but stick with it. Cut small pieces to form the gnocchi and keep them separated before cooking, otherwise they’ll all turn into one big lump again.

Make the sauce and boil water to cook the gnocchi. When the gnocchi finish cooking, mix them together with the sauce and mozarella.
